Guntur Chilli and the Mango Weeks

Guntur is known for chilli, and the kitchen uses that heat without turning every jar into the same red paste. Avakaya needs mango that is sour and firm. Cut too ripe, the piece slumps. Magaya is cut finer and leans on menthulu. Pandumirchi waits until the chilli itself has ripened red, which is a different week from the mango week.
We do not keep one mango pickle “in stock” through the year as if fruit were a powder. When you order in the mango weeks, the jar is closer to the tree. When you order later, it is the jar that was made while the fruit was right, kept under oil, not a new fruit forced out of season.
That is the food story, plainly. Season first. Then salt. Then the patience of the oil.
