Sankranti is the harvest festival, and this kitchen’s tin is the one people send home. Nei ariselu, pressed and full of ghee, with pongali in the morning. Palli chikki broken by hand. Nuvvula karam on hot rice if the meal is savoury. Bellam laddu if the sweet must be jaggery rather than sugar. Pandumirchi, if the red chillies have ripened, sits as the hot note beside perugannam.
Warm the ariselu until the ghee shines. Do not pour sambar on them. Keep the chikki out of the fridge. Keep the sesame podi away from the wet pickle jar so the seeds do not go soft.
A Sankranti box can be small. Ariselu, chikki, and one pickle is a true box. It does not need every sweet we make.
