Magaya on an Ugadi Plate

Magaya is not the same as avakaya. Avakaya is mustard-led and chunky. Magaya is finer mango, red chilli and menthulu. Serve it the same way: hot rice, mudda pappu, nei, and the pickle touched, not drowned.
On Ugadi the plate can hold magaya next to the bitter neem and the sweet. The rest of the year it is simply lunch. Oil on top, dry spoon, no reheating.
