When to Set a Jar Aside

Old avakaya sometimes shows a pale dry dust on the mango. In many houses that is salt and spice risen to the surface. If the smell is still mustard, chilli and mango, stir it back with a dry spoon. If you are unsure, ask us before you eat it.
Set the jar aside, and do not taste, if the lid bulges, if there is a wet slippery film, if you see coloured fur, or if the smell is sour in a rotten way rather than the clean sour of gongura or usiri. Bubble and gas in a jar that was quiet is a stop, not a stir.
